Ascorbic acid is ascorbic acid. Depending on how the vitamin C is derived, the quality of the process, there should be little of the original substances in the final product.
I would think of it like making gasoline from oil. The refining process removes (transforms) all oil.
A good vitamin C manufacturing process will have removed all elements of corn. Testing can verify that the vitamin C produced is "corn free."
